It took me nearly 5 years to research bluefin. In Japan, I had to convince the local businesses with my passion and belief to gain access to the farms, fishing, and auctions for bluefin tuna in the native markets.

I was astonished by the tuna farming process in Japan. The fish that weighs from 50-70kg that we are importing every week take nearly 3 years to raise.
